Pita Pizza – too simple. too tasty. it works.

So here it is, the embarrassingly simple Pita Pizza Bread. Super versatile, anything in your fridge throw together kinda pizza bread. Can’t believe it never occurred to me before to try this.

  • Pockets of pita bread
  • Canned pasta sauce, reduced by 1/3 to a thickish consistency – alternatively you can use pizza base sauce or tomato paste
  • Mozzarella cheese, cut up
  • Mushrooms
  • Minced fresh garlic
  • Salt and herb of choice
  • Pepper
  • Olive oil
Looking at the ingredient list, I realize how little we actually did – but it tasted like a work of art! The magic is in the pita breads which turn into this delectable crisp base.
So you start off by cutting everything up, snip open/ half the pita bread. Spread tomato paste and season with herb , salt and sprinkle minced garlic. Place mushrooms on top, drizzle with olive oil, top with cheese and crack some pepper. Bake in the oven at 180 (C) /  bench top until cheese is melted and the bread crisp. Takes approx 8-10 minutes.
Some ingredients you can play around with:
  • Capsicum
  • Pepperoni
  • Prosciutto ham
  • Parmesan or other forms of aged cheese
  • Chicken/ smoked
  • Cranberry sauce (oceans spray is decent or make your own)
