The culprit behind of my failed summer diet: The (simple) Chocolate Cupcake Recipe.

Another quick simple fail proof recipe today, with no butter and lots of moist amazing-ness. Originally I wanted to make vanilla cupcakes and color them black in tribute to the big Rugby World Cup 2011 opening, but realized chocolate was prob better – its semi black and way tastier – especially this recipe. I did however add a few drops of black food coloring into the mix for added darkness.

Chocolate cupcakes, I find require a lot of WOW factor to be memorable. This recipe most definitely works the WOW. lots of WOW. These are moist, full of cocoa flavor and light enough to not feel super guilty after like.. 4. They also make quite a large number (18 cupcake – regular sized) which is why the title is what it is. I can’t stop!!

I made these while watching the awesome RWC2011 line up on TV1 (If I can make these while “multi-tasking” it’ll be a breeze for most others). Also a very well done job for opening night! – Ka Pai RWC2011 !!


  • 1 cup milk
  • 1 cup Hot water
  • 1 cup Oil
  • 1 I teaspoon of vanilla
  • 1 1/2 cups of white sugar
  • 3 tablespoons of brown sugar
  • A pinch of nutmeg (Optional)
  • 1 tsp of salt
  • 2 cups of all purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup of good quality unsweetened cocoa

Sift and mix together your dry ingredients (flour, cocoa, nutmeg, the baking soda and powder) and set aside.

In a mixer add sugar, eggs, milk vanilla, water and half a cup of oil. Slowly add in the cocoa and flour mixture (do this in 3-4 loads). Fold in the other half cup of oil.

Pour into a cake tin or into a lined cupcake tin. Bake at 180 degrees for 40 minutes for a cake or for 15 minutes if you’re doing cupcakes.

Seriously. I’m not kidding you. These will make you FAT. Like F to the A to the TTT kinda Fat. Especially if you double dunk it into ganache – Oh Lord forgive me.


Ps: Ganache freezes well and keeps for a up to 6 months in the freezer! So make extra and be just that bit more happy! 🙂 Goes amazing on brioche dough toast, also works a gem when making chocolate mousse and pancakes 😀 Yay for the Ganache.
